Survivor Chicken is a dish that can be prepared easily by even a novice chef. Chicken prepared in the Survivor style is similar to Country Fried Chicken without the grease and mess. So without further ado, let's get started.
For 2 people, you need:
- 2 large chicken breasts
- 2 medium baking potatoes
- a stick of Parkay
- Head Country seasoning
- Seasoned Salt
- Black Pepper
- Cajun Seasoning
- about a cup or so of Western Star Seasoned Flour
Start the oven heating to 425 degrees. Put half the stick of butter in a 9 x 9 cake pan, and put it in the oven to melt.
While the butter is melting, prepare the potatoes for baking by putting 3 small pats of butter on a piece of tin foil. Wash a potato and place it on top of the 3 pats of butter, then shake about a teaspoon of cajun seasoning over the potato. Wrap it up carefully so the butter can't leak out and put it in the oven. Do the other potato the same way.
Now take the chicken breasts and season them liberally with Head Country Seasoning, seasoned salt, and black pepper. Roll the chicken in Western Star Seasoned Flour. When the butter has melted in the cake pan, lay the chicken in the pan. Cook for 35 minutes. Turn the chicken, and cook for an additional 35 minutes. Serve with spinach or hominy.
This is an easy dish to make, and there are several variations that are interesting. I usually cut a slit in the side of the chicken breast and put additional seasoning or even a cayenne pepper in the slit for extra flavor. You can also remove the skin from the chicken breast if you like. I always remove the skin from mine, and leave the skin on the other one for the wife. I have not tried using boneless chicken, but someday I will, and I'll report back.
In the summertime in the southwest, it is not a good idea to use the oven to cook Survivor Chicken because it heats the house. Luckily, this recipe will work very well in a convection oven. A convection oven is a wonderful machine... you can cook in a shorter period of time, and the house doesn't get hot. If you have a convection oven, and you want to try Survivor Chicken Convection Style, just melt the butter directly in the bottom of the bowl, and lay the chicken in it, then put a rack in and put the potatoes on it. You will have to shorten up the total cooking time to 50 or 55 minutes to keep the chicken from getting too dry.
