Chicken Fried Steak

 

If you live in the Southwest, then you already know what a treat a good chicken fried steak can be. For those who haven't had the pleasure.... it's not made from chicken. It's a piece of tenderized beef that is seasoned, floured, and fried in a skillet. Chicken fried steak can be served covered in cream gravy, or it can be served dry.

To serve 4 people:

Cut the round steak into four or six pieces. Season the meat with salt, pepper, and seasoned salt, and dredge in Western Star Seasoned Flour. Fry in a small amount of oil in a non-stick skillet until well browned on both sides.

Make white gravy by pouring off excess grease from the skillet. Keep enough grease to cover the bottom of the skillet. Add Western Star Seasoned Flour to soak up the remaining grease, then stir in enough milk to make a nice gravy. Don't forget to add a little salt. Cook until the gravy is slightly thick.

Chicken Fried Steak goes well with french fries and Texas Toast.

For a thicker coating

Prepare a batter by blending Western Star Seasoned Flour with your choice of water, egg, or milk, then coat steak with batter and fry until golden brown.
